If you have the equipment for it, a seated low-to-high cable fly is probably the best way to do a fly for your upper chest. Being on a bench seated is simply more stable than standing. If you want to focus on your lower chest, a high-to-low flye is a great option. A common thing I see on high to low flyes are lifters setting the cables high and then bending over at the hips which will essentially turn the movement to your conventional mid chest flye. Instead, keep your torso upright and sweep your arms slightly downwards instead of perpendicular to your chest.
