Skip the autolyse and go for a fermentolyse instead. Just mix your starter, water, flour and salt all at once. I’ve done it this way for years (because I always forget the salt otherwise 🙈) and honestly? It makes no difference to the final loaf. I haven’t done autolyse since I started making sourdough which is only January.
